Zeytin a\u011fac\u0131n\u0131n vazge\u00e7ilmez bir \u00fcr\u00fcn\u00fc olan zeytinya\u011f\u0131, insano\u011flu taraf\u0131ndan \u201cs\u0131v\u0131 alt\u0131n\u201d olarak adland\u0131r\u0131lm\u0131\u015f, \u00f6nceleri sadece yak\u0131t olarak kullan\u0131lm\u0131\u015f ve daha sonra insan beslenmesinde en \u00f6nemli yeri alm\u0131\u015ft\u0131r.<\/em><\/p>\n<p>Tarihsel geli\u015fiminde bir\u00e7ok efsaneye kaynakl\u0131k eden zeytin, eski uygarl\u0131klar\u0131n yaz\u0131tlar\u0131nda ve kutsal kitaplar\u0131nda yerini alm\u0131\u015ft\u0131r. T\u00fcrk mutfa\u011f\u0131nda zeytinya\u011f\u0131 yayg\u0131n olarak sebzelerle birlikte kullan\u0131lmaktad\u0131r. Zeytinya\u011f\u0131 ve sebze ile yap\u0131lan yemeklerin Osmanl\u0131 mutfa\u011f\u0131nda her zaman \u00f6zel bir yeri olmu\u015ftur. Zeytinya\u011f\u0131 ile yap\u0131lan yemekler Osmanl\u0131 d\u00f6neminde \u015fehirden k\u00f6ylere kadar yayg\u0131nla\u015fm\u0131\u015ft\u0131r. Bu durumun tek istisnas\u0131 Gaziantep ve \u00e7evresidir. Zeytinya\u011f\u0131 bu b\u00f6lgede \u00fcretilir ve pek \u00e7ok zeytinya\u011f\u0131 yeme\u011fi yenir.<\/p>\n<p>Ege k\u0131y\u0131lar\u0131na bakt\u0131\u011f\u0131m\u0131zda zeytinya\u011f\u0131 kullan\u0131m\u0131n\u0131n kahvalt\u0131da ba\u015flad\u0131\u011f\u0131n\u0131 g\u00f6r\u00fcyoruz. \u00dczerine kekik ve pul biber ekilen zeytinya\u011f\u0131 ekmekle yenir. Di\u011fer b\u00f6lgelerde zeytin, kahvalt\u0131 sofralar\u0131n\u0131n de\u011fi\u015fmez g\u0131dalar\u0131ndan biridir.<\/p>\n<p>Zeytinya\u011fl\u0131 yemekler d\u00fcnyada \u201cso\u011fuk ba\u015flang\u0131\u00e7lar\u201d kategorisinde de\u011ferlendirilse de bu s\u0131n\u0131fland\u0131rma T\u00fcrk mutfa\u011f\u0131 i\u00e7in tam olarak do\u011fru de\u011fildir. \u00c7\u00fcnk\u00fc zeytinya\u011f\u0131n\u0131 ba\u015fta yemek ve az yemek yemek yeme al\u0131\u015fkanl\u0131klar\u0131m\u0131za uymuyor. Zeytinya\u011f\u0131 \u00fclkemizde en yo\u011fun Ege k\u0131y\u0131lar\u0131nda t\u00fcketilmektedir. Bu nedenle Ege insan\u0131n\u0131n zeytinya\u011f\u0131 kullan\u0131m\u0131 konusunda uzman oldu\u011funu s\u00f6ylemek yanl\u0131\u015f olmaz.<\/p>\n<p><strong>Kereviz ve Zeytinya\u011f\u0131<\/strong><\/p>\n<p>\u00dcretimi ve t\u00fcketimi y\u00fczy\u0131llar \u00f6ncesine dayanan kerevizin sa\u011fl\u0131\u011fa olan faydalar\u0131 hakk\u0131nda destanlara bile konu olmu\u015ftur.<\/p>\n<p>Kereviz, k\u00f6kleri ve yapraklar\u0131 b\u00fct\u00fcn olarak t\u00fcketilen bir sebzedir. \u0130\u00e7erdi\u011fi vitaminler, mineraller ve bitkisel besinler sayesinde sa\u011fl\u0131\u011fa bir\u00e7ok faydas\u0131 vard\u0131r. K\u0131\u015f aylar\u0131nda t\u00fcketilmesi tavsiye edilen kereviz bol s\u0131v\u0131 i\u00e7erir.
